Gulab jamun
We are now into the festive season and every festival has its own dedicated sweet dish. But I feel gulab jamuns are such sinful yummies which can be had anytime. No occasion required. Isn't it?
I made some today and could not resist to pop in one as soon as they had drunk the sugar syrup and were still hot.
The best part of making these is that they are easy to make and you shall find all ingredients in your pantry.
I used the homemade mawa. I have already shared it's recipe. So once you are ready with the mawa. Make small balls of it, fry them in ghee and dip them in sugar syrup. Gulab jamuns are ready.

1tsp Maida
300 grams Ghee
For Sugar syrup
250 grams Sugar
150-180ml water
Few Kesar strands(Optional)

Method
- Take the mawa in a plate and add the required maida to it.
- Knead it to soft dough with the help of your palm. Keep it covered.
- In a deep pan take the sugar and add water to it. Let the sugar melt. Once the sugar has melted cook the syrup for a minute and switch off the flame. We just need a thin sugar syrup. No string consistency required. Add kesar strands to it and keep aside.
- In another kadai take the ghee and turn on the flame on simmer. As the ghee is getting warm make 20 small balls out the dough we had prepared.
- Once the ghee is slightly warm add the mawa balls and gently stir them with a stick or a fork. Fry on simmer till they are golden brown.
- Once done, immediately remove them with the help of a strainer and put them in sugar syrup.
- Let them rest for 30-40minutes and then serve.
Points of concern:
- While rolling the dough into balls make sure there are no cracks. The balls should be very smooth. If you try to fry a cracked ball it will split in ghee.
- Always fry them on lowest flame. Else they will cook from outside and remain uncooked from inside.
- Fry them in batches. Each batch should take about 4-5minutes.
