Vegetable Gold Coins
I have been making these since many years. My grandmother taught me. She was an expert cook. I can say, a self made chef.
Be it Indian, Chinese or Italian and what not, she kept on trying until she achieved the perfection. We lost her almost two years back and I still cannot overcome the loss. Rather I can never overcome it.
When I was a kid, she made these vegetable gold coins for the first time we were so much fascinated to see round shaped breads. I was so young that I could not understand that how a square bread turned round.
I dedicate this post to her.
These vegetable gold coins are easy to make and fun to eat. They are crisp, mildly spicy and colourful. I enjoy making these for evening snack with tea. It is another healthy recipe as it is made with curd and some vegetables and cooked with very less butter.

Vegetable Gold Coins
Serves 4( Makes 8 pieces)
Ingredients
8 Slices of bread
1 cup Curd
3 tbsp Sooji
Salt to taste
Pinch of Black pepper powder
1/2 cup finely chopped vegetable mix (deseeded tomato,capicum,onion)
Butter
Method
For the topping
- In a bowl take the curd, add sooji, salt and pepper and the vegetables to it.
- Let it rest for 5 minutes.
For Gold coin
- Cut out the bread slices into roundels. Watch the video for better understanding.
- Check the topping if the sooji has soaked all the excess water from curd and vegetables.
- The topping should be firm to spread but not runny.
- Start heating a griddle/ tawa and grease it with little butter.
- Spread a nice layer of the topping on the bread slice rondel and carefully put the topping side on the pan to get the topping toasted first on medium flame.
- By the time the gold coin is getting toasted from one side, apply little butter on the top side of the bread.
- Once you see that the topping is almost golden in colour, flip the bread and let it toast till golden brown and crisp.
- Once the bottom side is done immediately remove it from griddle/tawa.
- Serve hot and crisp with ketchup.
Tips:
- Remove the excess water from curd before making this topping.
- In case your topping is getting runny, add little more sooji and adjust salt and pepper accordingly.
- You can also use coloured bell peppers in the vegetable topping.
