Patra - Colocasia Leaves Rolls
Gujaratis and their variety of food is fabled world over. Whenever I talk about Gujarati snack and food I remember Kareena Kapoor's dialogue from the movie 3 idiots, "Tum Gujarati bade cute hote ho, par tumhara khana itna khatarnak kyu hota he, Dhokla, Thepla, Handva, Fafda, aisa lagta he koi Missiles hain."😁
Today I shall be sharing with you one of the famous gujarati snack item recipe, Patra.
Patra are made by rolling colocasia leaves (Arbi ke patte) with sweet and savoury besan filling. Arbi patte or colocasia leaves are normally available with vegetable vendor. Always choose the leaves which are tender and of medium size. The greatest care to be taken while preparing this dish is handling these leaves. You have to wash them thoroughly and remove its veins, especially the middle one. If not removed properly then it might cause irritation in mouth and throat after eating.
I shall be explaining you the method to prepare this snack with relevant pictures as well as videos. I have tried to make the recipe simple so even beginners can try it.
Patra - Colocasia leaves Rolls
Serves 2-4
Ingredients
10-12 Colocasia leaves(Arbi ke Patte)
150 gms Besan
1 1/2 tsp salt
1 tbsp ginger chilli paste
1 tsp red chilli powder
Pinch of soda bi carb or mitha soda
1tbsp Grated Jaggery or granulated sugar
2tsp Aamchur powder
For tempering
1 tsp oil
1 tsp mustard seeds
2-3 green chilies
4-5 curry leaves
Method
Thoroughly wash the leaves. Identify the front and back side of the leaves.
Remove the thick veins of the leaves with the help if knife and flatten smaller veins with the help if rolling pin.
Keep aside all the leaves after removing their veins.
In a separate bowl take the required besan and add salt, soda, jaggery, aamchur, red chilli powder and ginger chilli paste. Make a thick batter of this mixture with water. I used about 1/2 cup water to make this batter.
Once the besan mixture is ready, start boling water in a steamer. Place a perforated plate in the steamer. The patra roll will be placed on it to get steamed.
As the water is boiling in the steamer, start preparing the rolls by taking one big size leaf on the counter. Back side of leaf on top. Apply little besan mixture in the leaf. Now place another leaf over it. Repeat the procedure till all leaves are nicely coated with besan mixture.
Slightly fold the sides and start rolling from one end till you form a log.
Cooking in steamer will take about 20-25 minutes. Cool down the roll after cooking and slice the roll in thick pieces.
Heat oil in a kadai for tempering. Add mustard seeds, green chillies and curry leaves to it. Now add patra pieces and stir them gently. Cover for 2 minutes on low flame. Serve hot.
Enjoy them with a dash of lemon for morning breakfast or shaam ki choti choti bhuk.
