Eggless Tutti Frutti Cupcakes

MERRY CHRISTMAS!

It is Christmas today. The birth of Jesus Christ. Christmas is a beautiful festival with lots of goodies , gifts and my favourite Santa Claus. 

I have been celebrating this festival since childhood. When I was young this was the only day in the year when we used to eat cake. Yes you are thinking right... I rarely used to cut cake on my birthday. My mom used to satisfy us with kheer or halwa... The round shaped halwa.. Indianized Cake.

But as I grew up my urge to bake increased and then I started experimenting with baking. It's been about 6 years and I now bake professionally as a home baker. 


These are tutti frutti cupcakes. My favourite and very easy and basic to bake. The photo that I have shared is 6 years old photo. This was the first time I had baked a cake. The result was awesome and since then they became my favourite. I would love to share its recipe with you.

Tutti Frutti Cupcakes - Eggless

Makes - 10 cupcakes

Ingredients

150 grams Maida(Refined Flour)
3 tbsp Milk Powder
1/2 tsp soda bi carb (mitha soda)
100 grams sugar powder
1 tsp baking powder
25 grams Tutti frutti
1/2 tsp Vanilla essence
100 ml Aerated Drink (7up, dew or sprite)
50 grams Melted Butter
1/4 cup Warm milk
1/4 cup Yoghurt 
Few chocolate chips (optional)

You will need 10 cup cake moulds or a cupcake tray. Grease it with some butter and dust it with some maida. Alternatively you can line it with some cupcake liners if you have.

Method

Preheat oven at 180 C  for 15 minutes. Keep all ingredients and baking tray at hand before stating the process.
  • Take a large bowl and a sieve. 
  • To the sieve add all dry ingredients. Maida, milk powder, soda bi carb, baking soda and sugar powder. Mix well and sieve it into the bowl.
  • To this  dry mixture add tutti frutti and mix well.
  • Now add melted butter, aerated drink, vanilla essence, milk and yoghurt.
  • Mix the batter till everything is properly mixed. Do not over mix. Gentle mixing will help. 
  • Pour the batter in the mould. Fill each mould 1/3rd keeping little space for the cake to rise.
  • Bake for 20 minutes.
Tips
  • Measurements are very important in baking. Be precise with them.
  • Best procedure to start baking is first gathering all ingredients on kitchen counter then preheating the oven. While the oven is getting preheated make the batter.
  • Chocolate chips is optional. You can add it to batter and garnish them on top as well. Put them on cupcakes before baking.
Orange flavoured Cupcakes

If you want to make orange flavoured cupcakes just replace the vanilla essence with orange essence and above mentioned aerated drink with fanta.
