Pudina Puris
All of us like to eat puris. They form a great combination with aaloo ki sabji or chole. Be it fasting or feasting puris are always a hit among Indian families.
Although I do not prepare them often but trying out variations is fun. Bountiful Pudina leaves(mint leaves) in kitchen garden and we wonder what to make out of them. The leaves have a refreshing flavour and is ofcourse very healthy.
So to put them to their best use I made Pudina puris and a mug full of hot coffee and some aam ka achhar. Ah! Lovely Trinity.
I make them in the simplest way and these puris are good for breakfast, kids lunch box or even when you are travelling.
Pudina Puris
Makes 16 Puris
Ingredients
For dough
1 cup Wheat flour
1/4 cup sooji
1tsp Oil
Pinch salt
1tsp white til(sesame)
1/2tsp ajwain seeds
For Pudina mixture
1/2 cup fresh pudina leaves
1 green chilli
1 whole red chilli
1/2 tsp salt
1tsp sugar
1/2 inch piece of ginger
2-3 garlic cloves
Oil for frying
Method
- In a chutney jar grind all the ingredients to make pudina mixture to fine paste. Do not use water for grinding.
- In a large bowl, take all the ingredients for dough.
- Mix the pudina mixture to the flour mixture.
- With water knead semi soft dough.
- Cover and let it rest for 15-20mins.
- Now divide the dough into equal portions and roll them like puris medium thick.
- Deep fry them in hot oil.
Tips
- Adding sooji to puri dough makes puris crisp and keep them puffed for longer time.
- The dough for puris should not be soft. A hard dough soaks less oil and the puris become less oily.
- While frying puris make sure the oil is very hot else the puri will become oily and not puff.
