Aam Papad Raita
Summer is coming... And in this lockdown period we have limited pantry. Moving out of house is not safe so we are cooking from what we have at home.
Raitas are a must at our home during summer dinner. Curd has many essential nutrients and is also a coolant. A bowl of curd seems boring but a little effort makes it a wonderful accompaniment.
Now a days I am facing difficulty finding ripe mangoes. But I had few Aam papad lying in my fridge. I immediately remembered how my Mother in law makes a delicious Raita with it.
This raita is indeed one of the easiest to make. The aam papad gives it mild sweetness along with aromatic tadka of Hing and jeera. This Raita is comparatively runnier than other raitas. Don't make it thick else you won't enjoy it.
Aam Papad Raita
Serves 2
Ingredients
1/4 cup Aam Papad (crumbled into tiny pieces)
1/4 cup fresh curd/ yogurt (whisk it and make it lump free)
1/2 cup Chilled Water
Pinch of Salt, Black Salt and red chilli powder each
1/2 tsp ghee
Pinch of Hing
1/4 tsp jeera
Few fresh coriander or pudhina leaves chopped
Method
- Soak the crumbled aam Papad pieces in water.
- After 5-7 minutes add whisked curd to it.
- Also add salt, black salt and red chilli powder.
- The beauty of this Raita lies in small chunks of Aam papad... Don't crush them.
- Heat a tadka pan. Add Ghee and make a Hing jeera tadka. Immediately put it in Raita.
- Serve chilled. Garnish with coriander/ pudhina.
