Dal Makhni

We all love to eat Punjabi/ north Indian food at restaurants. One of the most ordered dal variety is Dal Makhni. It is thick, rich and creamy lentil preparation which is  slow-cooked with mild spices. The dal used in this recipe is Sabut Urad dal. 

 

Since we all are staying at home and saving ourselves from Corona.. I thought of deviating from regular dal prepration and make something more joyful for the weekend. The best combination with this dal is crisp tandoori roti for me.. some may like laccha paratha or a naan or even jeera rice. But I kept our lunch simple with some hot crisp traditional tawa roti and Dal Makhni.



 
Dal Makhni

Serves 2

Ingredients

1/2 cup Whole black lentil (Sabut kali Urad dal)
1/4 cup rajma
Soak both together in 1 + 1/2 cup water for atleast 5 hours

1tbsp finely chopped garlic ( Divide into 2 portions)
1/2 tbsp finely chopped ginger
1no. green chilli finely chopped (optional)
2 Large tomatoes ( pureed)
1 tsp Kashmiri red chilli powder
1/2 tsp Normal red chilli Powder (added to increase spice level)
Salt as per taste
60 - 70 gms Butter (Divide it in 3 equal portions.)

Method
  •  Pressure Cook the soaked dal and rajma for 4-5 whistles or till soft and mashy.
  • In a pan heat one portion of butter.
  • Don't burn the butter. Add chopped chilli, ginger and one part of chopped garlic. Saute on low flame for a minute.
  • Now add both Red chilli powder. Stir for 10 seconds.
  • Next pour the tomato puree and cook on low flame for 4-5 minutes till tomatoes are nicely cooked. It will start releasing butter. 
  • Once you see butter again add salt and boiled dal.
  • Stir and add second portion of butter.
  • Add 1/4 cup water at this stage and cook on low flame for 7- 8 minutes.
  • In a seperate tadka pan add the third portion of butter. Heat on low flame and add second portion of chopped garlic.. saute for  half a minute and add this tadka to simmering dal.
  • Adjust the consistency by adding little water to dal. 
  • Let it simmer for 10 more minutes. Keep stirring on intervals. We don't want it to stick to bottom of the pan.
  • Serve hot, garnished with little fresh cream/ ghar ki fresh malai/ a dollop of butter and fresh coriander.
