Khajur Rolls

 We have all been fighting against this pandemic with great strength & vigour. Eating good is an essential habit to stay strong and safe. With winter touching its peak all of us remain more aware of healthy food habits and nutritious diet.

I am back to share with you another sweet dish which is delicious, nutritious & easy to make. You can even involve your little one in the preparation. They will have fun. 

Khajur or Dates.. their nutritional value is incomparable. High on fibre so they are beneficial for blood sugar control. Fibre slows down digestion & prevents blood sugar level to spike too high.

Although they are little higher on calories but they have antioxidants that increases our immunity. It also a rich source of pottasium, magnesium, copper & iron. 

During winters we have a habit of eating a date in the morning with our breakfast. The season in Delhi is quite chilling and this routine gives our body warmth to stay fit..it also helps us stay away from common cough & cold. 

Today I am sharing an easy sweet dish made with dates & dry fruits.. the cooking time is hardly 5-7 minutes but they are delightful little looking rolls which will win everyone's heart. 

KHAJUR ROLLS

Ingredients

500gm Dates/ Khajur (deseeded) I have used soft Omani dates. They are generally dark brown to black in colour. They are extremely soft & sweet. 

2-3 tbsp Unsalted pista

2- 3 tbsp Almonds

2- 3 tbsp Cashew 

2-3 tbsp Walnuts 

Roughly chop above dry fruits and lightly toast them in ghee/ coconut oil and set aside. 

2tsp ghee/ coconut oil

3 tbsp Poppy seeds (dry roasted) used as garnish. It is optional. 


Method

  • Deseed all the dates.
  • In a pan heat the ghee and add the dates. Keep mixing them & and within 3-4 minutes you will find them soft and mushy. 
  • Keep mixing them with a spatula.
  • Once they form a lump switch off the flame and add roughly chopped & toasted dry fruits. 
  • Mix them with spatula.
  • Wear kitchen gloves or wear big size zip lock bag in both hands. 
  • Grease them with 2-3 drops of ghee. 
  • Punch out a large portion of dates dry fruits mix and roll it into a thick log. Remember the mixture is hot so save yourself from burning in this step. 
  • Once you have rolled the logs roll them in a plate of poppy seeds. Now wrap them in a cling wrap and cover to set them in refrigerator for an hour.
  • After an hour unwrap them, cut into thick circles and store in an airtight container. 
  • It's shelf life is around 2 months at room temperature. 
TIP: 
  • You may add any dry fruits of your choice. Since the dates are soft & sweet I do not add raisins. 
  • You may also add chia seeds or sunflower seeds as per your liking ( always toast them before use). 
  • You can also add a tbsp of dessicated coconut if you like coconut flavour. 
  • You may use dried rose petals to garnish instead of poppy seeds.
